WHO’S BEHIND BUTTERBING?

Buttering is the brainchild of passionate baker and chocolate lover Simone. The crew working to bring you Butterbings include our ardent kitchen team who are constantly experimenting to create new buttercream flavours, and a savvy delivery team who make sure that you (and all our partner cafes) get your dose of cookies fresh and on time. We work to bring you quality baked goods all day, everyday.

HOW DO I GET A BUTTERBING OR TWENTY?

Our creations can be found at over 100 of Melbourne’s favourite cafes or even better, we’ll deliver it directly to your door via bicycle if you order online.

WHERE DO YOU MAKE THEM?

They’re small-batch made in Melbourne.

ARE THEY GLUTEN FREE?

All of our cookie sandwiches are made using gluten-free recipes, but are not suitable for people with severe allergies to gluten or nuts. Our products are crafted on equipment that also process nuts, particularly peanuts and hazelnuts.

HOW LONG WILL THEY KEEP?

Butterbings keep for up to 5 days when kept refrigerated and airtight.

HOW DID BUTTERBING GET STARTED?

The journey began back in 2013 in the home-kitchen of our founder and self-proclaimed cookie enthusiast, Simone Clark. Simone had nothing but time and creativity to invest in getting the bakery going, so she kept it simple. With ingredients from her local IGA supermarket, a few bowls and a standard kitchen mixer (plus a whole bunch of elbow grease and caffeine, of course), she baked and sold an assortment of slices and biscuits to nearby cafes and neighbours.

The “Honesty Fridge” on Simone’s front porch attracted local fans to pick out their favourite sweet treats, and leave coins and handwritten notes of appreciation in exchange. Mid 2013, chocolate brownie cookie sandwiches, named 'Brownie Kisses’, were created and added to her product range. Pretty soon, it became clear that a certain humble cookie sandwich was always in demand. 

These new-to-market cookies were such a hit that Simone was baking up to 16 hours a day with a home oven that could only fit six cookies at a time. Fuelled by her entrepreneurial spirit and passion (and pure stubbornness, really) she’d hop on her bike to deliver her creations to customers in the city. 

Simone decided to move into a commercial kitchen and focus purely on the one product, making them well with the hand-picked team she needed to grow. In 2014, the bakery was renamed and relaunched into Melbourne's specialty cafe scene as 'Butterbing'.
